What is the single dish to try in the Mekong Delta?
There is no single one; each town argues for its own. Start with a noodle-soup breakfast where you are staying — hủ tiếu around My Tho, bún nước lèo around Soc Trang and Can Tho, bún cá in Chau Doc — and bánh xèo later in the day.
When is fruit season in the Mekong Delta?
Nhân Dân describes May to September as the year's largest orchard harvest in the southern delta, and Can Tho's city portal puts its own peak at June to August. Some fruit, such as green-skin pomelo and Cầu Đúc pineapple, is available all year.
Does this site sell food tours or cooking classes?
No. Mekong Cuisine is an information site only. It does not sell tours, classes, tickets or food, and it does not take bookings.

Dishes by town
Why do dishes still carry old province names like Sóc Trăng or Bến Tre?
Because the dish names are older than the 2025 merger and did not change. Sóc Trăng is now a ward of Can Tho city and Bến Tre is part of Vinh Long province, but cooks, packaging and menus still use the traditional names.
Is any Mekong Delta restaurant in the Michelin Guide?
No. The 2024, 2025 and 2026 editions of the MICHELIN Guide Vietnam cover Hanoi, Ho Chi Minh City and Da Nang only.
Which dishes are seasonal?
Cá linh dishes and lẩu cá linh bông điên điển belong to the flood season, roughly August to November in the upper delta. Muối ba khía is harvested in the 7th to 9th lunar months. Most noodle soups, pancakes and cakes are available all year.
Are the older sources still reliable?
For what goes into a dish, usually yes; recipes change slowly. For prices, opening times and whether a particular stall still exists, no — which is why the table gives no prices and names few shops.

Noodle soups
What time do noodle stalls open in the Mekong Delta?
Market-side stalls open early with the markets themselves; a 2013 VnExpress visit found Chau Doc busy at 6 a.m. Many specialist stalls sell out or close by late morning, so go early.
What is the difference between hủ tiếu and bún?
Hủ tiếu Mỹ Tho uses noodles cut from dried rice sheets, with a clear, sweet pork-and-seafood broth. Bún is a round rice vermicelli, used in bún nước lèo, bún cá and bún mắm, whose broths are usually based on fish or fermented fish.
Is bún nước lèo Khmer or Vietnamese?
It began in Khmer kitchens around Soc Trang and is now cooked by Khmer, Hoa and Kinh cooks. The Khmer version uses mắm bò hóc fermented for at least six months.
Can vegetarians eat delta noodle soups?
Rarely. The common broths use pork bones, dried shrimp, squid or fermented fish. Look instead for the coconut-milk version of bánh tằm and for sweet cakes.

Is Ben Tre coconut candy a heritage product?

Markets and street food
Are the Mekong floating markets still open?

Much of it is, if you choose busy stalls where food is cooked in front of you. Follow WHO's five keys and the Ministry of Health advice: clean stalls, clean oil, and away from traffic dust.
Should I ask the price before eating?
Yes, especially near tourist landings. Reader complaints about price gouging at Cai Rang over Tết 2026 show why.
