How to read the table
Each row is one dish. Linked to gives the town or market that press coverage ties the dish to, with the province or city it belongs to since 1 July 2025 in brackets. When is the time of day or the season the dish is usually eaten; seasons and harvest months come from the sources, while the time of day is our own rough guide, and "any time" means we found no strong pattern. Notes say what is in the bowl or on the plate. Source is the publication and the month it was published.
A dish being linked to a town does not mean you can only eat it there. Bánh xèo is cooked across the south; lẩu mắm is on menus in every large town. The link tells you where the dish is a point of local pride, and where a local cook will have firm opinions about how it should taste. Where only one thin or old source exists, the notes say so.
Dish names keep their Vietnamese spelling so you can show them to a cook or type them into a map. Place names are written without diacritics, as they appear on most English maps.

What we left out, and why
Phú Quốc is now a special zone of An Giang province, but its island kitchen — fish sauce, seafood, pepper — is a subject of its own and is not covered here. We also left out dishes for which we found nothing but recipe blogs, and we kept bánh canh Bến Có and bánh tét Trà Cuôn only with a warning, because a single 2014 article is all we have.
You will not find "Michelin-recommended" anywhere on this site. The MICHELIN Guide Vietnam 2026, unveiled on 4 June 2026, covers Hanoi, Ho Chi Minh City and Da Nang only; the 2024 and 2025 editions covered the same three cities. No restaurant in the delta is in the guide, whatever a sign says.

When this table will mislead you
A table flattens things. The same name can mean different bowls a few kilometres apart: bún nước lèo in a Khmer kitchen uses mắm bò hóc, while other cooks lean on other fermented fish, and the Tra Vinh bowl is known for its pile of herbs. If you order by the table and get something different, you have probably found a local variant, not a mistake.
The "when" column is also a habit, not a rule. Noodle shops near markets open early and many close by late morning; hotpot is an evening, group meal and a solo traveller may struggle to order one portion. Flood-season dishes depend on the fish actually arriving, which is less certain than it was. And some dishes — field rat, dried snails — are local staples that not every visitor will want; the table lists them because they are part of the food culture, not as a dare.
- Ask for the dish by its Vietnamese name; English menu translations vary.
- In merged provinces, use the old town name to find the dish — nobody calls bánh pía a "Can Tho cake".
- If a row matters to your trip, check the source and its date: some are more than ten years old.
Common questions
Questions readers send
Why do dishes still carry old province names like Sóc Trăng or Bến Tre?
Because the dish names are older than the 2025 merger and did not change. Sóc Trăng is now a ward of Can Tho city and Bến Tre is part of Vinh Long province, but cooks, packaging and menus still use the traditional names.
Is any Mekong Delta restaurant in the Michelin Guide?
No. The 2024, 2025 and 2026 editions of the MICHELIN Guide Vietnam cover Hanoi, Ho Chi Minh City and Da Nang only.
Which dishes are seasonal?
Cá linh dishes and lẩu cá linh bông điên điển belong to the flood season, roughly August to November in the upper delta. Muối ba khía is harvested in the 7th to 9th lunar months. Most noodle soups, pancakes and cakes are available all year.
Are the older sources still reliable?
For what goes into a dish, usually yes; recipes change slowly. For prices, opening times and whether a particular stall still exists, no — which is why the table gives no prices and names few shops.
